Is there any way to create dynamic gradients?

The UI is very confusing to me.
Say I have a text box. I can change the Fill and I can see my changes updating as I change them. I can apply gradients. The gradients work.
But if I go to the properties page, and bring up dynamic fill, in the first place I have no way to control the gradient. I am given a choice of a dozen "lighter" gradients and a dozen "darker" gradients, but I can't change the actual start end end gradient colors.
Not only that but no changes take effect until I simulate the program.
Also, there is no "apply" button in the properties panel. There are all sorts of properties I can change, but no way to "apply" them. The only way I can see to apply them is to close the properties box. Then if my changes weren't exactly right I have to open the properties box again.
Am I doing something wrong?
